Cocktail Batching for Bars: Speed and Quality at Volume

Cocktail batching is one of the most powerful tools available to a busy bar. Pre-making cocktail base mixtures allows faster service, more consistency and less waste without sacrificing quality — if done correctly.
Batching a Negroni with Four Pillars Spiced Negroni Gin
Equal parts Spiced Negroni Gin, Campari and sweet vermouth — Strucchi Rosso is our house pick. Batch in a sealed glass bottle in the fridge. For a pre-diluted format, add 20% water by weight; pour 108 ml over a large ice cube, stir briefly, express orange peel. The Spiced Negroni Gin's additional botanicals are even more integrated after resting in the batch. (Spec reference: the classic Negroni.)
Batching for Events
For maximum event efficiency, ready-to-drink formats are already the pre-batched answer: pre-canned Negronis eliminate batching entirely while maintaining bartender quality. For a branded event serve, pour into a rocks glass over ice with a fresh orange peel.
Citrus in Batches
Fresh citrus oxidises rapidly. For citrus cocktails — Daiquiri, Margarita — batch spirit and sweetener only; juice to order. For events under two hours, fresh citrus can be incorporated in a chilled, sealed batch and served within that window.
Frequently asked questions
- Should citrus go into a cocktail batch?
- Only for short events (under two hours), chilled and sealed. Otherwise batch spirit and sweetener and add fresh juice to order — citrus oxidises fast.
- How much water goes in a pre-diluted batch?
- Add 20% water by weight to replace the dilution normally gained from stirring or shaking, then serve over ice with a brief stir.
