How to Set Up a Premium Back Bar

The back bar is the visual centrepiece of any drinks operation and the foundation of your cocktail menu. A well-architected back bar affects both revenue and guest experience — this is how to structure one.
Category Architecture
Workhorses: high-volume cocktail spirits. Premium upsells: feature bottles supporting higher menu price points. Hero bottles: conversation starters. The working ratio: for every premium bottle, two workhorses; for every hero bottle, two premiums.
Core Selection from Our Portfolio
Rum: Spirited Union as the botanical hero, plus a clean white and an aged expression. Gin: Four Pillars Rare Dry as the core workhorse, with the Spiced Negroni Gin for menu-specific serves. Agave: ArteNOM 1579 Blanco as the cocktail hero, with La Escondida or Don Amado as the mezcal feature. Modifiers: Bandoeng'22 as a unique cocktail modifier. Mixers: premium sodas for a highball programme. RTD: a ready-to-drink Negroni for events and high-volume service.
Mixers Guests Can See
Premium mixers — grapefruit soda, ginger beer, mandarin and bergamot — elevate any highball programme. Premium mixers are visible to guests and communicate quality at every serve.
Frequently asked questions
- What's the right ratio of bottles on a back bar?
- Two workhorses for every premium bottle, and two premiums for every hero bottle — so volume, margin and theatre stay in balance.
- What makes a good hero bottle?
- Something guests ask about: a genuine story, a distinctive look or a category-of-one product — a botanical rum or a clay-pot mezcal does more talking than a fourth vodka.
- Can Pineapple Drinks Club help design our back bar?
- Yes — back bar and category-mix advice tailored to your venue concept and price architecture is part of our horeca service.
