Made at Destilería El Pandillo by master distiller Felipe Camarena. This blanco comes from the highest-altitude tequila region in Jalisco and is made from slowly matured highland agave. Style: fresh, expressive, and agave-driven. Flavor: bright notes of mint, white pepper, delicate herbs, and richly roasted agave. Production: slowly baked in traditional brick ovens, then crushed and double distilled in copper pot stills. Character: a vibrant blanco with strong terroir, typical of Los Altos.

Process
Agave halved and quartered (cogollo removed), slowly steam-roasted without pressure in traditional stone ovens.
30 hours of roasting: including 6 hours of pre-roasting to release bitters and 6 hours of cooling.
Juice extraction via a gear-spindle roller crusher (nicknamed “Frankenstein” at the distillery).
Double distilled in copper pot stills to approximately 56% ABV, then reduced with reverse osmosis water.
Water used for proof adjustment consists of 50% rainwater and 50% filtered spring water sourced from the estate itself.
Aerated prior to bottling, filled at 40.7% ABV.
