Don Amado Ensamble Tobalá & Bicuishe
Made by master distiller Germaín Arellanes Arellanes in San Pablo Apostol, Oaxaca. This ensamble combines the aromatic intensity of Tobalá with the spicy, wild expression of Bicuishe. Traditional Santa Catarina-style production (wood fire, wild fermentation and ceramic pot stills) results in an elegant, layered mezcal.
Style: aromatic, exotic, refined mineral. Flavor: Earl Grey, dried orange peel, candied mango, cinnamon, soft wood notes, and a jammy, round finish with a hint of liquorice. Aroma: summer stone fruits, rose petal, roasted red chilies. Character: a deep ensamble with floral freshness, spicy warmth and Oaxacan minerality.

Process
Maguey halved and quartered (cogollo removed) and roasted for four days in an earthen pit oven over guamúchil and mesquite wood.
Roasted maguey macerated with the family's own blade-spindle destrozadora (a family technique).
Natural fermentation in 1,400 L pine wood vats, with bagaso and using only open-air wild yeasts.
Double distilled in fire-fired ceramic pot stills to approximately 53% ABV, then reduced with triple-distilled demineralized water, without the use of tails.
Un-aged, bottled at 46% ABV.
